Default How long will frozen game keep?

    Hi all,

Just joined this forum recently and haven't made many posts but I've already learned a ton of stuff from reading around. My question has to do with keeping game meat in the freezer. I was given some bear meat a little while ago and it's been sitting in my freezer. I got it from someone around the 3rd week of september and it had been in his freezer only for a couple of days, its wrapped in butchers paper. Will anything bad happen to the meat (other than freezer burn I suppose....like any other meat)

    Ryan

also...anyone have a good way to prepare it? I've heard sausage and chilli and stuff like that, but I've never eaten it before and would like to taste the flavour of the meat as opposed to masking it in real strong tastes...unless thats the only way to do it.

sorry if this is in the wrong forum area...not sure where to put it.

i don't know about bear meat but for deer they say it's no good after 6 months(i think) if paper wrapped

when it is vacume sealed it will go a lot longer. me and my dad had deer meat from 2006 (vacume sealed) we made stew earlier this week and it was great
and we all felt fine afterward lol

You can keep that meat in the freezer for a long time.... I'd say about 1 year.
I like to marinade mine, but if you don't want to mask the flavour, just cook it like any other piece of beef or venison. I don't know what cut you've got, but if it's a tender one, you can barbecue it just like any other steak. Another good way is to throw it in the slow cooker with some vegetables, onions and potatoes etc. This will keep almost any cut quite tender. I love bear meat but some don't. Hope you enjoy it. My mouth is watering, just typing this.

I have kep vension for 2 years if a roast is a bit freezer burned I just cut it off. I usually put the roast in a slow cooker. Usually my deer only lasts about 6 - 12 months.

I find that my deep freezer does better job for long term storage. Its at a colder temp and freezes the meat quicker resulting in less celluar damage to the meat/fish (So I have been told). Still have a few pieces from 2007, no problem from this end. Vacuum seal is the best however waxed butcher paper and freezer bags will do.

The problem with keeping frozen meats is not the meat itself but the fat in and on the meat. The fat in meat doesn't totally freeze so it begins to go rancid after about 6 months in meats like pork. Wild game however has little fat and as some of the guys have found, it last and keeps it's flavor allot longer than 'commercial meat'.

I've read bear fat will go rancid even if frozen, I eat bear as quick as possible and trim off fat before cooking.
Saying that I've had it in the freezer for a year with no problem.
