I`ld treat it like grouse. I`ve had lots of pigeon before, and it`s awsome. Can`t wait to try doves.
never coked grouse before though, do you have some advice?
just breast them and u will get 2 pieces nugget size.....wash and shake in a garlic/crumb mixture and fry for about 5-10 minutes in butter.....key is not to over cook....they are very tasty and moist but need a load for a good meal......enjoy....meat is dark in colour
Wrap breasts in bacon and pan fry until bacon is done, but not too crispy.
DELICIOUS!!
X2 on the bacon wrapped dove. We cut each breast into 2, marinated overnight and on the grill (offset on the BBQ).

baste and marinade in soysauce (whole bird) and roast sitting up. vancouver china town recipe at it's best. serve with white rice :D
Breast, mix with Montreal steak spice, bacon wrap and BBQ on med heat 3-5 mins a side. Best I ever had:)
Oh ya, buy a premium bacon, PC offers one that is pepper encrusted, adds taste and hold together better than the cheaper brands.
