I am not really clear on what she is trying to do, its obviously not a bite dog, there is no scent discrimination going on (ie HRD/ contraband), or any other work that I can see. She seems to be using the dog's reward to train some sort of possessiveness in the dog.
In my experience the reward is given on the find, and only on the find not to used for anything else.
In this video (3rd down on the page) we see Colin developing intensity (building drive) through a combination of verbal encouragement and a food reward at the find, this is only done on the find. The food reward for this dog was pork liver, some of the dogs are trained with a toy for a reward.

I think she's nuts...and if she struck my dog in the face like she does (1:23-1:25) I'd be out of my chair and having words.
Who uses their leash as a toy.....that is just asking for 'bad' dog behavior in the first place.
I think people are missing the point. Using the leash like that is to make her point, and she's not really hitting her dog..lol

Now I may take it back that it is a leash/lead....on second look it may be in fact that dogs toy, that looks like a lead...still not the smartest thing to do either.
She's making a claim that the worst trainers ("ever notice how bad trainers have high drive dogs?") have high drive dogs. She goes into hysterics to get her dog to show more drive by yelling, slapping, and getting worked up to show how high the drive is in her dog when she acts like an idiot, or a "bad trainer".
She does this demonstration in what appears to be a dog training class. I doubt she's beating the piss out of that poor beast right there in front of everyone to get her point across..lol.
That was the message I got anyway. I thought she was quite the actress. :)
