Saw 2 rabbits today in the same swamp. One all white, one almost all brown. Pretty neat

They have been white around here for a few weeks. IMO, much better eating than the European.
I would disagree European hare and cottontails are far better eating especially when the snowshoes diet become pine..
Why what happens when they move to pine? Do they become bitter in taste?
