Goose Pastrami
Seen this recipe several years ago and have always been interested in making it but never had, finally just got around to making up a batch...........wish I had done it years ago as I’ve been missing out!! Turned out fantastic!!
I'm not going to write the recipe out but a quick google or YouTube search will put you on the right track, lots of options (Can pm me for my exact recipe if you would like). Basically a 72 hr cure process then smoke until internal temp reaches 145, let cool and slice.
Cut one breast up at work to share with the guys on crackers, it was gone in seconds with them wanting more. So last night at work I made up a couple Reubens, cut them up and distributed them to the guys and again they were looking for more!! This batch was 6 breasts to try out, there will be a bigger batch getting done shortly, sliced up, vac sealed and I’ll have pastrami for the year!!

I highly recommended this for guys with some goose breasts in the freezer trying to figure out how to use them up.

Sounds great... Always looking for different ways to try receipts out. Love Reubens on toasted rye bread... Will have to do a search... Thanks for posting... Look forward to seeing some pics...

Not sure why it’s giving me a hassle trying to load up pics, so far just this one, have pics of it sliced up and a nice looking Reuben but no luck uploading. I’ll try again later

this site is horrible for posting pics.....or maybe it’s my phone??? Been trying everyday to post pics and I get one here or there and now this one is upside down........ anyways it was a tasty Reuben!!

First batch was such a hit a second bigger batch had to be made!! Happy with results, just as good as first batch. All sliced up and packaged!
