Recipes for perch, other than frying?
I love fish tacos. 1tbs chili powder, 1tsp each oregano cumin and garlic, some ground pepper. Double this if you need too. Rinse and pat dry fish and spread spice both sides. Now two methods: fry some onion in olive oil and once soft put fish in to cook or put in foil and cook in BBQ or stove for no fry. I like mine with coleslaw with the same spice mix added to mayo.
You can also get a box of old El paso and use just that.
I also sometimes coat the fish in spice then add the spice mixture to beer batter and did the fish as well and fry it. These pieces are better with soft tacos or tortillas as they can be big for hard tacos.
I haven't done this with perch but walleye and pike.
