Lots of different methods/ways to do it. Don't be cheap, get peanut oil!
Ive found cooking a wild turkey at 3min/pound is way to much and dries it out because of the lack of fat in the bird compared to store bought. About 1min/pound for a wild bird works well for us.
I still do a bit of deep frying but don't anymore with wild birds . I just spice them ,inject them, sometimes bit of bacon, and cook them in one of those turkey bags you get in the grocery store . Never a worry about a dried out bird . Takes a bit longer but it's love at first juicy bite . And no mess .

1) Cook in an area that is away from people, pets and wood.
2) Make sure bird is patted dry.
3) Start at 375 lower bird and the temp will drop to 325
4) Keep cooked bird under tin foil for a minimum of 30 minutes after cooking.
