Hey guys, I was wondering if there are any recipes for pepperettes out there? is it basically like making sausages (ie. or does it require more salt for curing etc) as well are there any butcher shops near the GTA that will make them for you, if you bring the deer vension?

lots of recipes out there and boxes you can buy to make it easy. buy them at canadian tire, sail, peavy mart etc.
most butchers that smoke will also do pepperettes. not sure about GTA but my favourite are the mennonite run ones. J-mar in mount forest was always my go to.

Fish-ON you can make your own quite easily. Having pepperettes made is bloody expensive ! Having a stuffer and a smoker makes it easier and a better product, but you can also do it with just a jerky cannon and your stove at home. You can use your BBQ as well to add some smoke taste, or stuff them in smoked casings. Hit Peavey Mart and you'll see a huge assortment of different flavours. Spice packs to do 15 lbs of meat are about $17 and a huge pack of LEM collagen casings are about $28. For $45 you can buy the snack stick kit which comes with both the casings and the spice. Hi Mountain brand even has a variety pack that has four different flavours in it so you can make small 2-3lb batches to see what flavours you like. They come with easy to follow instructions. I add 25% pork fat to my venison grind and I buy this at the local butchers. I just got 6lbs for $45. I cube the fat into dice-sized pieces them run the fat and the venison grind through the coarse grinder plate once after adding spice and the required amount of water to the mix. Some people like a venison/pork shoulder meat mix (just buy pork shoulder when it's on sale at 2.99/lb). I prefer straight venison but it's so lean I like to add some pork fat. Once you've got this down to an art, switch up and use your goose breasts to make pepperettes as well.
A sausage stuffer makes it so much easier to stuff your casings when making sausage or pepperetes. You just change the tip size to match the casing size. Peavey has the 5 lb LEM on this week for $100 bucks off ($113 saving). A great deal. I have this one and it works fantastic. I stuffed sausages using a stuffer plate on my grinder for 25years and it was a pain. I kick myself for not having purchased a stuffer on day 1. A 5 pounder is all you'll ever need.

We can try a small batch to test and more whenever you like. Meat can be frozen until ready. Save your money and do it yourself or get someone to show you how, a small investment for equipment and a lifetime of good eats.
