I`ld treat it like grouse. I`ve had lots of pigeon before, and it`s awsome. Can`t wait to try doves.
never coked grouse before though, do you have some advice?
just breast them and u will get 2 pieces nugget size.....wash and shake in a garlic/crumb mixture and fry for about 5-10 minutes in butter.....key is not to over cook....they are very tasty and moist but need a load for a good meal......enjoy....meat is dark in colour
Wrap breasts in bacon and pan fry until bacon is done, but not too crispy.
DELICIOUS!!
X2 on the bacon wrapped dove. We cut each breast into 2, marinated overnight and on the grill (offset on the BBQ).

baste and marinade in soysauce (whole bird) and roast sitting up. vancouver china town recipe at it's best. serve with white rice :D
Breast, mix with Montreal steak spice, bacon wrap and BBQ on med heat 3-5 mins a side. Best I ever had:)
Oh ya, buy a premium bacon, PC offers one that is pepper encrusted, adds taste and hold together better than the cheaper brands.
Pick the birds and split up the back.
Rub with olive oil salt & pepper.
Place a slice of apple and sprigs of fresh thyme in the breast cavity.
Stitch together with thyme stem (or tie with butchers twine).
Marinade in oil & white wine overnight.
Put on a spit and roast over charcoal (or gas BBQ) till medium rare.
Fry with a lil olive oil and a smigion of butter for taste, garlic and cajun to taste. When cooked thru add veggies and when soft add to wild rice with a lil honey or wife.
Clean the breasts by removing the silver skin, in a casserole dish place sliced onions in the bottom with enough garlic to suit your taste buds , place the breasts on top of the onions , salt and pepper to taste and cover with some more onions , then over all this pour a can of Campbells mushroom soup and bake in the oven at 325 degrees for app. 1 1/2 hrs.
Serve over rice with wine of your choice enjoy.
Great thanks for all the input will be sure to try them out now that I have some recipes.
Sounds like some good recipes, might have to try these out If i ever get some doves down!
