I would also say that my favorite game to eat would probably be grouse. I'm pretty plain.. so cooked in butter in a frying pan with sliced potatoes at hunting camp lol:)
I would 3rd Grouse. Cubed in a pan with butter and a little salt and pepper is my favorite hunt camp treat.
Bear, my son and I just love it.... bear steaks and bear burgers are number one on our list followed by deer burgers, which we will be having tonight... :)
Ruffed grouse pan fried in butter with onions on rye bread is a traditional lunch in moose camp for us. Hard to beat.
Deer burgers. Love my burgers.
Caribou is easily my first choice. There is something special about the fragrance of the meat from the lichen they eat.
Most of our venison gets cut into chops and cooked over a wood fire. I even have a grill that fits into our fireplace. Of course my wife's grouse pie is pretty good as well.
In order:
1. Woodcock
2. Ruff Grouse
3. Moose
4. Elk
5. Whitetail
They are all good and in fact the order may change depending on cut and how it is prepared. Had a sirloin tip roast off of a whitetail tonight and it was pretty fine.
I just got done bbq some venison chops diced up and wrapped in thick sliced bacon. Cooked up a mound on the plate and set it out for the four of us and except what was put aside for the boys lunch for work tonight, the plate was cleaned up. I also like bear and goose. I kabob the goose breasts and grill them.
My favorite is Bear Goulash
Moose by a wide margin.
Then probably grouse
I have to second the caribou
Love it all, but still nothing beats a few fresh grouse.
Grouse is always a treat, but I'd say that my best game meal was a 14 pound jake done on the rotisserie in the BBQ. Toms are what I target in the field, but for eating a young bird is amazing :):)
Make sure you and The Wife don't get caught with those Ontario caribou.....

Wow, choosing favourites.....moose. Grouse. Then deer, then bear....but I will take a good bear HAM over a deer roast any day.
I do love elk too, but haven't eaten a lot of it so far.
For me nothing beats late season corn fed mallards, in general though ducks are my favourite table fare, not all ducks obviously. I also love grouse and a good feed of venison and moose too!!!!
Love it all but i would have to say moose is my favorite.
Nothing beats a fresh deer tenderloin and heart victory meal at the camp. We eat it same day as the kill, never brought a tenderloin home its the camp tradition.
Ruffed Grouse cooked like Cornish Game hens with stuffing,Venison spaghetti sauce and Moose roasts. OK,now you did it. I'm headin' for the kitchen to raid the fridge.

My favourite would have to be moose, venison comes in at a close second. When it comes to things that fly, it's hard to beat ruffed grouse.

Deer or moose fast-frys. Battered in Kronzy's Canadian Fisherman's coating.
The same with partridge finger (grouse). While bird hunting, always a cookstove
and breading for a trail lunch with a nice cold POP.

Whole grouse in tinfoil pouch, with pats of butter, basil, oregeno, salt and pepper. On bottom of tinfoil a layer of onions then roasted in oven, daughter loves it.

I've eaten a lot of beaver but I find taste to be hit and miss so wouldn't be my favourite. Toss up for me between moose and grouse, 3rd would be rabbit
Deer tenderloin, grouse breast, thin slice of moose quickly fried in butter, rabbit stew, cured goose breast, BBQ aged duck breast.... I just can't decide, love them all...
Hungarian Partridge, Woodcock/Grouse, Rabbit(Cottontail, European Hare, Showshoe) followed by big game like Moose/Deer.

Simple recipe I found on the web a few years ago that I have been using:
Step 1Clean the woodcooks and retain their giblets, if you wish, to make a sauce or stuffing. Use tweezers or pliers to remove any remaining pinfeathers, and cut off the head and neck.
Step 2Preheat your oven to 400 degrees Fahrenheit. Woodcocks have little fat under their skin to protect the meat, so brush them lightly with melted butter and lay a strip of bacon over each breast. Pin it in place with a toothpick, then arrange the woodcocks in a casserole or baking dish.
Step 3Roast the woodcocks for about 20 minutes, or 25 to 30 minutes if the birds are especially plump. Remove the bacon halfway through the cooking time, if you wish, to minimize its effect on the woodcock's flavor.
Step 4Remove the woodcocks from your oven and let them rest under a loose tent of foil for 5 minutes, then serve them whole or halved on rounds of toast.
When I was a kid, my uncle use to feed me moose burgers, been my Fav ever since.

A simple method that works great is to simply fry the woodcock in butter med rare and salt and pepper to taste. Very impotent thou, do not overcook, meat must be pink in middle or woodcock will take on a very strong liver taste.

Nothing beats a nice grouse. Panfried, little butter, salt, pepper....
Deer tenderloin is excellent but a nice Tom breast is runner up.
Elk for the win.
#1 would be Pheasant done up in the slow cooker !!
#2 would be Venison chilli, or a roast in the slow cooker done up with some nice red wine,
#3 would be blueberry fed Black Bear. Tried a slow cooked roast a few years back and it was FANTASTIC

Woodland Caribou, Elk, Moose, mule deer, pheasant.... they are all good but buffalo is very nice as well
Moose would be no.1 for me. I have not tasted caribou.
Only had bear once and it was fantastic.
I am surprised only a couple of guys mentioned pheasant. When I was young they were plentiful in this area and hard to beat.

Maybe it is because I have not had rabbit or squirrel in a while, lots in town but very few on the hunting properties and we generally do not small game hunt anymore.
