my son wanted squirrel tails to tie flies .. i told him he would have to buy them as i don't shoot squirrels cause i think they are a rat with a bushy tail . he said if i shot them he would clean them and eat them ? so i shot one for him and he did what he said, that was 5 years ago now its a main hunting trip now to fill up on tails and squirrel meat, it is really good i was very surprised
Tastes like chicken and really good roasted over open fire with some salt and pepper. I mix with rabbit (when I can find them) in squirrel and rabbit stew.
We hunted them almost as a joke a few years ago, I would describe more like rabbit than chicken. So good, so tasty! Wish I could find more of them where we hunt (they are 95% red squirrels where we hunt, very rare to find a black or grey).

Have been hunting and eating them for years, i think they taste better than rabbits.
Squirrel meat is that basis of Brunswick stew [ I'm not an east coaster].

We have hundreds of red squirrels that kill young nest bound birds but are too small to bother cleaning. A few blacks that I hope will multiply except that my neighbour loves their taste too......
The flying squirrels are just too cute to kill.
There is a Grey on my bird feeder eating freely and getting to be the size of a cat; he is little aware of the bigger plan. I'm hoping for 4lbs of meat for the crock pot :)
I plan on eating Eastern Grey Squirrel -- as soon as they move out of the city and I get a season for them.
I collected 1/2 doz a few years back (never ate them before) and roasted them whole. Put them on a serving plate in front of a group of non-hunters. You should have seen their faces. Unfortunately they were very tough. I either over cooked them or cooked them without liquid.
