The best thing I ever did was to start to butcher my own. My Venison never tasted better & my cuts are well exactly what I asked for... :)
i think you're looking for an abattoir. (i assume you want to take a whole, skinned deer carcass)), i inquired about doing the same thing at a local butcher shop and they sent me to an abattoir (i'm not in your area so no help there) but i agree with the above, learn to do it yourself. there are a thousand youtube vids on how to do it. i will be processing my own from now on.
Many will not touch anything wild, the restrictions on an abattoir are very tight, it is a heck of a lot more than a butcher shop.
parkcity, an abattoir is for live animals, for a dead animal you have to find a butcher shop that can legally butcher wild game or someone who butchers on the side. Many of the butcher shops that used to butcher wild game were forced to stop due to possible contamination between wild and domestic, many who still butcher wild game will shut down for a period of time to process only wild game.
Give the Tillsonburg gun shop a call they may know of someone

I am close to tillsonburg. I'd you do get a deer give send me a message and I will help you cut it up. I even have a spot to hang a few deer.
How close to Tillsonburg do you want them to be ?
You only need a 5 inch fillet knife. Bone out the different muscle groups and cut to meal sizes and package ( I vacuum seal ).
Troy Spicer in Aylmer started doing it last year with a couple of folks. Troy is a honest guy with a ton of experience 519-719-0922. I believe Johnson Meats north of Aylmer on Glencolin also does deer.

NEVER take it to Gourmet meats on Hwy 6 in Mount Hope - HIGHLY overpriced. I asked for a regular cut and they charged me for a Deluxe cut which I have no idea as to why as all I wanted was ground meat and bone in stew meat (NO special cuts). Then they took it upon them selves to add beef to my ground meat which I did not ask for!!! never never never again
