The Last Alaskans

I watch this tv series called the Last Alaskans - it covers the lives of several people living in the Federal Alaskan Preserve and living off the land - they do a lot of hunting to provide the meat that they depend on - 60% of their diet is meat taken from hunting wild animals - mainly caribou and moose - I notice that they eat every part of the animals that they shoot - tongue, nose, liver, heart, stomach etc. - nothing is gone to waste - but watching the show last night the one couple - Hiemo and his wife ate raw stomach right after shooting a caribou - I thought to myself that is a good way to pick up a lot of parasites - these people must be loaded with them - any hunter must be sure that they cook the meat taken from any animal - especially a wild one - this applies to fish also - parasites can do a job on you - even kill you

What internal temperature do you cook your wild game to?

I know people claim you have to cook anything wild to well done but if taken care of properly there is no difference between a deer and a cow for meat quality, medium rare on the BBQ is the best, maybe even a little more rare.

For bears yes, due to trichinosis and poultry have their issues but herbivores are no different if they are wild or domestic, assuming healthy and the meat taken care of properly and cooled quickly.

sorry don't agree with you. Is this something you know, or just something you think? Lots of wild game is safe to eat completely raw. Has been happening for thousands of years.

If your not sure, then yes play it safe and cook, but don't just go spreading rumours based on what you think is right.

Many people eat these dishes and enjoy them , our daughter and a couple of her friends often go out for these meals .

In many cultures, our " native first nations people " , you have them also in the U.S. , eat raw liver and heart from deer , moose and elk, this to celebrate their successful hunt.

Generally agree and really wouldn't be worried about deer myself but as outlined in your link and through my own prior research as i've prepared it before, raw fish for sashimi and nigiri needs to be frozen at a certain temperature for a certain amount of time to kill parasites prior to eating, so although not cooked with heat, it is treated first. I wouldn't suggest catching a yellowfin tuna cutting it open on the boat and taking a bite, you will most certainly get away with it sometimes but probably not a wise decision to keep repeating.

i love my red meats rare and have always wanted to try blue rare which is barely above raw.

A Chef friend told me that eating anything raw is like playing Russian Roulette with ones health. Everything we eat is cooked to,at least,medium rare except poultry and pork which gets medium well to well done. I like that show,too,but,with all "reality" shows,I think they take a big dose of literary license.

Yup wild game should be cooked to at least medium. Wild game such as rabbit carry a variety of parasites including tapeworm that can be easily transferred to humans. Keep in mind farm raised animals for meat purpose are kept in a completely controlled environment for the most part and are dewormed via feed etc. And yes people do get parasites from raw fish such as sushi and personally know someone that has gotten very ill.

I suggest you watch a program called - Monsters Inside Me - if you can get it - it is usually on Animal Planet station - it tells real stories about people who ended up getting parasites from eating food that was not washed or cooked enough - a lot of the times it takes a long time to find out what was the matter with the person after seeing a number of different doctors - recently a North Korean soldier crossed into the South - he was shot but lived and taken to a hospital - the doctors found that he was filled with parasites - including a tape worm over 12 inches long - years ago my wife was preparing some pork chops for supper - she had a habit of scraping the meat with a knife before cooking it - after doing that she set the meat on a plate for awhile - then she noticed some white worms coming out of the meat - we called the health department and ended up meeting the agent at the store where we bought the meat - if we would have eaten that meat without first cooking it properly we could have easily got real sick - the agent told us that there is no guarantee that any meat or fish doesn't have parasites and the only thing to do is make sure you cook it at a high enough temperature - pork 170 degrees

That would be pretty funny watching somebody skid their arse across the carpet.

Years ago I hunted with an Italian guy who would thinly slice a fresh killed goose breast and eat it raw. I remember saying to him “ are you nuts” he would say to me it was common in his culture and tasted great as he slurped it down. Gross.

Joe... the North Korean did indeed have parasites in his stomach, but the suspected culprit is raw vegetables fertilized with human waste. It's said that if you put a chop in coke it will cause white parasites to exit the meat. Except they are not worms at all. They are fat deposits.

That happens quite often , you read about it in newspapers and hear it on the news, vegetables and fruits that come from south America and even from California, that's why they always advise to wash them before consuming.
I believe this would be the supposedly treated waste from sewage farms used on food crops where it is not to be used.

Have heard that often about coke bringing out the fat in meat .

Having lived in an Inuit community in Canada's arctic for the last 6 years I can tell you that this is a common practice in the north, not just done for entertainment value. The Inuit slice the liver and kidneys out of freshly killed caribou then dip it in the stomach contents.

It does not look all that appealing and I have no interest in eating stomach contents. That being said I have tried the raw liver and it doesn't taste much different than cooked liver.

Traditionally, these practices served important purposes in survival. The high iron content in raw liver for instance, gives a huge amount of energy and even produces a warning effect throughout the body. You can imagine how this would help when hunting in minus temperatures. Fruit and vegetables were not very common in the arctic precontact; enter the stomach contents of caribou. By eating the partially digested stomach contents the Inuit gained access to vitamins and nutrients that they would not have been able to get. The fact that they are partially digested allowed the human body to more easily break down the vegetation.

I would also assume that having digestive systems that evolved over years of these dietary practices, the Inuit would be far more likely to have evolved resistance to many dangerous parasites. Perhaps they are better suited to this diet then those of us who descended from settlers and explorers. Maybe they are just consistent winners in the game of food Russian roulette...

Roulette for sure. I took several pathology courses so I make damn sure I cook what I'm eating. I always tell my buddies who eat sushi to google anisakis before they dine again. Over 4000 cases per year in Japan alone and that's just the diagnosed portion of the population. Careful prep of the sushi meat does not protect you. Salt and pickling does nothing. Swedes Spaniards, and Dutch are crawling in nematodes from eating raw and fermented herring and anchovies. Permanent damage to the mucosal lining of your intestine with life long complications that mimic Chronn's and ulcerative bowel disease. No thanks!. Look at all the crippled Greenlanders and Alaskans who are screwed for life from eating undercooked or raw walrus meat. Trichinella larval cysts embedded in all their skeletal muscles for life. You get the option of going on high dose prednisone (slowly eats your skeleton away) and other roids for the rest of your life, just to be able to function and tolerate the pain. Cook it if you're eating at my house!!

Ya I know, I always cook my meat, I will not eat raw beef either but the majority of the parasites do not need a 180 internal temp as they claim. Beef can get worms too, and lambs for sure, but yet they are always eaten medium rare or worse. You look at domestic duck, that stuff is almost always mid-rare, nothing unsafe there. How the domestic duck is better than a wild duck is unknown to me, it is not like they take samples of every animal slaughtered, they only test things that look sick or have weird looking organs, you should always be cautious of this when hunting too.

Well don't know what part of Italy he was from, maybe a regional thing, but definitely not a common cultural practice.

my deer meat is cool blue when it comes off the grill..

meat is ruined if it is anything more well done than rare...

Just had sushi tonight this post made me crave it....going to make some Lox in the morning as well mmm mmmm.

Steaks are blue rare especially venison

I cant imagine being so paranoid about eating...you can watch all thw TV shows you want disorder this monster that parasite blah blah blah all your seeing is extreme cases mixed with drama and even less scientific credibility...our economy is based on fear...but it doesnt have to be!

Best sashimi I had was fresh caught on a boat in Korea they filleted it and we ate it less then a minute after it was caught....now damn me to hell for being so irresponsible lol....

Scariest thing I ever saw someone eat was very well cooked pork in Haiti, cooked for 3 days, it was well done and had a hint of fly, we ate the fried plantains, I still hate plantains.

I'm with you there. People are so friggen paranoid around here. The way I see it, the more "stuff" you introduce to your body, the better immune you will be to other things. You think the pioneers back in the days had thermometers and all this other stuff to make sure their meat was cooked to perfection every time? Heck no.....If my meat isn't red in the middle, i really don't want it.

One ancestor of mine who came from the old world died at the age of 94, another was murdered outside a bar in his 20s, outside of the 1918 influenza there are no illnesses in the prime of life since we came here in the 1850s.

You'd be a handy dude to have in the boat when you run out of bait. LOL Get your buddies to do an intervention and take you to a doctor if you start scooting on your front lawn !

I wish that some of you guys that make light of the effects parasites can have on you watched Monsters Inside Me last night - there was a guy from Milton, Ontario who was filled with small worms that put thousands of holes in his digestive tract and attacked his vital organs - he died - then there was a boy around 8 years old that picked up a parasite in his nose while swimming in a warm fresh water lake - the parasite got into his brain and caused the brain to swell - he had to be put into a coma but passed away - then there was this little baby that got a virus from a deer tick - it seems what happened was the father came come from hunting and picked up the baby - a deer tick got onto the baby and passed on a virus - the baby almost died but eventually survived - it said that deer ticks can pass on to humans not only lyme disease but also a virus - to pass this virus on to a person it only has to be on a person for 15 minutes - Ok I guess I have said enough about parasites - just thought I'd pass this information along for your benefit

The guy who had wholes in his digestive tract, how did her get it?
The boy who picked up a parasite in his nose, should we outlaw swimming?
The deer tick infection, stop walking outside unless you are on concrete or asphalt.

It is called mitigating risk, there was also a guy who had a helicopter crash into him while he was walking along listening to music, if he just had those ear buds out he may have heard the helicopter falling on him.
