That actually sounds really good. I love Thai flavours but never thought to combine it with fish. I will try it out sometime :) Thanks
Ok, where's the peanut in this peanut sauce? Is the fish pre cooked or is it cooked in the sauce?
There is a couple of ways that this can be prepared. The easiest is to buy the satay packages from an asian food store, sometimes Food Basics carries the stuff. There are two packets, one is a marinade for the fillets, the other is the peanut sauce. Saute the vegetables in some margarine, add a can of coconut milk, bring to a slow boil (add more spices and PEANUTS if you wish)and then add the peanut sauce packet. Lay the fillets on the bubbling sauce and cover for two minutes. The fillets will almost be done, you might have to flip them here. Be careful not to over cook the fish. Serve it over the rice. Easiest recipe around.
That sounds like a great recipe. Will have to try it this winter on some perch or walleyes. May ad a few of the finger hot peppers to it though.

This will definitely be one that the wife and I try out...we already have done a few trout up in coconut and green curry sauce...I'm a huge fan of peanut sauce...now I just need to go out and get a few fish :D
