    I love fish tacos. 1tbs chili powder, 1tsp each oregano cumin and garlic, some ground pepper. Double this if you need too. Rinse and pat dry fish and spread spice both sides. Now two methods: fry some onion in olive oil and once soft put fish in to cook or put in foil and cook in BBQ or stove for no fry. I like mine with coleslaw with the same spice mix added to mayo.

    You can also get a box of old El paso and use just that.

    I also sometimes coat the fish in spice then add the spice mixture to beer batter and did the fish as well and fry it. These pieces are better with soft tacos or tortillas as they can be big for hard tacos.

    I haven't done this with perch but walleye and pike.

    Butter in a frying pan and coat in original fish crisp. Pan fry till golden brown,dont over cook. It is a toss up between this and deep fried as to my favorite. The pan fried does not seem to sit quite as heavy as the deep fried in the old tummy, especially if you are washing them down with a wisers and pepsi or a barley sandwhich lol.

    In a well buttered baking pan , place your perch fillets , coat with butter lightly sprinkle on a little dill and bake , that is the way we do most of our fish, [perch walleye and salmon.
    For a little different taste , use garlic butter.

    A very simple and healthy(er) method is to just cook them on the barbecue. I just put foil over the grates, spray it down with cooking spray and put the fillets on. My wife likes just barbecue sauce but I like to sprinkle cajun seasoning on them. I also do walleye fillets this way, just make sure you slice them evenly. It's quick too, usually 5-10 min and they're done. TC
