Bear receipt
Hi guys and girls-any good receipt how to cook-bake-fry-BBQ a bear meat....?Thanx

BEAR RAGU on FETTUCCINE
1 lb. fettuccine or papardelle
2 lb meat cut into 1 inch cubes
2-4 Tbsp olive oil
1 large Spanish onion
5 garlic cloves
6 anchovies diced
3 bay leaves
1 cinnamon stick
5 cloves
¼ tsp red pepper flakes
1 cup red wine
2 Tbsp tomato paste
1 can tomatoes drained and chopped- keep the fluid in case pot runs dry
Large twig of oregano
Several large fresh sage leaves
1 Tbsp red wine vinegar
Salt and Pepper
Use a Dutch Oven/4-6 qt. stock pot
Brown the meat in batches on medium high heat and set aside.
Reduce heat to medium and fry onions until starting to brown.
Add the anchovies and garlic. Fry for a minute.
Stir in chopped herbs, cinnamon and cloves.
Stir in wine and simmer for several minutes.
Return meat to pan.
Stir in chopped tomatoes, tomato paste bring to light boil, cover and then simmer for 1-2 hours until meat is easily broken by pressing with a potato masher/large fork.
You want the meat broken into shredded bits so it blends to make a chunky sauce.
Stir in vinegar.
Serve over pasta.

Garlic powder, slat , pepper, pan fired in lots of butter. Enjoy the meat.
