Pickled Eggs
I could have sworn we had a pile of pickled eggs recipes in this section...but the search engine isn't showing any.
Anyway..this the one the guys at my camp like...
Pickled Eggs
1 dozen eggs, hard-boiled, peeled
2 cups white vinegar
2 teaspoons ginger, ground
1 tablespoon pickling spice
12 whole black peppercorns
2 onions, sliced
3 cloves garlic
1/2 teaspoon dried dill weed
1/4 cup sugar
In a small saucepan combine vinegar, ginger, pickling spice, sugar
and peppercorns and bring to a boil. Reduce heat and simmer 5
minutes.
Place eggs in a 1 quart jar along with onion, garlic and dill weed.
Pour vinegar mixture over all. If vinegar mixture does not completely
cover eggs add water. Cover and refrigerate at least 4 days before
serving.

Chillie Pepper Pickled Eggs
12 eggs
1 tab mustard seeds preferably yellow
4 tab plain salt
10 peppercorns preferably white
6 cloves
5 dried red chillies
slivers of fresh ginger
600 mls white wine vinegar
Boil eggs 10 minutes till hardboiled and remove shells. Cool in
cold water.
Bring all remaining ingredients to the boil and boil 2 minutes.
Remove the cloves. Dry the eggs and place in sterilised jar and
pour over the spiced vinegar ensuring that the eggs are completely
covered. Seal when mixture is completely cool. Leave 4 weeks
before using.

In my opinion best eggs to pickle are Quail. Always had them on hand when we used to raise 'em. Been a long time since I had some though.
