Venison Stew

Here's an excellent venison stew recipe that I came across while reading Deer & Deer Hunting. I omit the cayenne because some members of the family don't like heat & I add one or 2 cups of peas for colour about a half hour before it's done. I usually simmer it without the lid on for a few hours more as I like a thick stew.
