Well I soaked the squirrel in buttermilk for a little longer then a day then I took some flour pepper and salt in a bag and put part in the bag shake It up and fryed in a frying pan with 1/2 inch of oil and it is pretty good!F995673D-2FC8-4BCE-85BB-E22127D16A04.jpg

My neighbour, his 2 brothers and I supply the squirrels for a local wild game dinner. Usually around 18 to 20 squirrels. The cook there cooks them in a pressure cooker until the meat falls off. he then adds all the ingredients - peas, potatoes etc. for a meat pie.
this mixture is put into those butter-tart sized shells ... from Costco ... then back in the oven .... he makes about 150 mini squirrel meat pies.
about 120 people at this dinner. Everyone leaves saying their local squirrels are in trouble! mmmmm

I love squirrel stew. I cut up 2 squirrels into 6 pieces each. I simmer them in about 2-3" of water till tender. While the meat is cooking I cut up carrots, potatoes and some turnip (optional). I take the meat out and add the veggies. While the veggies are cooking I pull the meat off the bones and put the meat back in. I now thicken the sauce into gravy with flour or if in a hurry some gravy mix. Enjoy.

Has too much time on their hands
Put the squirrels in a casserole dish. Make enough sauce to cover them by combining 1/4 water with 3/4 ketchup.
Add some green onion or chopped onion, and maybe a tablespoon of barbecue sauce.
Bake for 45 minutes covered, then 45 minutes uncovered at 350F.
Serve with rice or egg noodles, spooning sauce over everything.
This works amazingly well for rabbits or pork spareribs as well.
