I do the same thing with lesser cuts of venison or beef. Marinate with olive oil and Worcestershire first. My favorite coating mix is the Fish Crisp Cajun. Great on the plate or in a wrap with fried onions, peppers, mushrooms and garlic.

Well I finally got my turkey and thought I'd try a version of this, as I'm lazy. I cut up in small piece like yours, just used shake and bake. Used deep fryer. they turned out great, so thanks for the idea.
