Most likely my next dog breed. Just confusing to figure out all the "types". My focus will be on a breeder that keeps dogs in the house and foot hunts. That's what I want... regardless of type.

Waiting for you to come over to the dark side.
That's the thing about setters you can get exactly the type of dog to fit you. Shape, size, color, and temperament. May take a bit of looking and seeing the parents first hand but it can be done.

I don't think you can guarantee the color. Both my setters where white and black as pups and as they aged both of ended up with the dark coats. Both parents had black and white coats as well

That's the norm for setters.
puppy white will darken as matures. For end color got to refer to the parents.
