Bear Sausage Recipes?

Anyone have a bear sausage recipe that is mild but not hot hot hot...? I have made homemade italian sausage all my life and now want to try bear sausage. I figured the same ingredients would work. I did google it and got some basic stuff similar to what I use with pork. I just thought I would check in here as well as often some of you have some interesting twists on your recipes.
