    Interesting read,
    as for cows and sheeps, we eat the whole thing, legs and head and even the stomach linings.

    Hahaha, hearts, gizzard and the popes nose caused a free for all at family get togethers around these parts.

    Girl I used to date had family brawls over pig tails.

    Depending on the animal, very little goes to waste around here.

    I can well remember my grandmother making chicken foot soup and true headcheese.

    Hadn't thought of pig tails in years...I grew up in Kitchener and they were standard fare at most October feast tents. My Mom used to do them up occasionally for us. It has to be 30 yrs since I've had them.

    Same with the hearts, gizzards and pope nose...they were always on the dinner plate.

    We must be boys from the Bay eh !!

    It's funny how different areas have their "things".

    My brother is coming to give me a hand putting up the walls of the house this weekend, with one caveat. Duck gizzard stew.

    A little off topic but it was explained to me how heritage can be somewhat traced with one blackberry. Pig tail girl once gave me one blackberry as we meandered a family field, unknown to me she was intently watching how I would eat it. A few minutes later her "aha" moment came and she explained that seeing me pop every seed between my teeth for some time after explained of coming from a lineage stricken with hard times.

    Next time you eat a black berry, pay attention.
