Alcohol and tobacco are already quite heavily taxed so smokers and drinkers are paying more. Junk food taxes have been discussed and are only a matter of time.
Are there available opinion surveys confirming that a majority of Quebec is against the curfews? There were a few reactionary anti-vaxxers having a hissy fit in Montreal but it seems most of Quebec went along with the new restrictions without serious complaint.

They are still a 'voluntary' burden on the health care system..and if you think the sin taxes go in health care, you'll have to prove it to me.
The reality is..the intention of this 'fine' is not monetary gain to pay the bills....it's all about coercion... to force more vaccinations.

They would still have to incur an additional tax based on their voluntary choice to consume these products, to be consistent with an ‘anti-vax’ tax. I would be curious to see a breakdown of where the alcohol/tobacco tax actually goes. Doubt much of it makes its way to the hospitals.
You did not address the other examples re cancer patients or gun owners. People can still be obese regardless of a junk food tax, even if they don’t consume junk food...but an excess of regular food and lack of exercise.
These taxes are not the answer.
The evidence that most people oppose the curfew is solid. Look at the public opinion from a wide range of the political spectrum. When even prominent liberal softies are furious at this, you know there is a problem. The protesters are not “anti-vaxxers” as you continue to incorrectly claim. Many who have decided to get jabbed stand up for what is right — freedom from unscientific and destructive mandates. More and more people are realizing they’ve been duped, and are joining the non-jabbed in solidarity against this nonsense.
There are massive protests all around the world against these mandates. Don’t forget many who are afraid of being exposed due to fear of job loss, etc. might not attend public protests but agree with them anonymously online for example. There are many elderly people who aren’t going to go marching in the freezing cold who support those fighting for freedom.
Your pro-lockdown and pro-vaccine mandate position has been made loud & clear.

Massive protests? Not in Ontario. At best the anti-vaxxers might get a couple of thousand out in Ontario.
Meanwhile, over 12 million people in Ontario have rolled up their sleeves and got the shot.
