Duck fat garlic Parmesan fries

Duck fat's delectable deep flavour gives a unique taste and crunch to fried goods, especially these twice-cooked French fries.

Looks good.
How many ducks does it take to fill 4 cups of duck fat?
How is it for cholesterol?

A hunting recipe from OOD's Food Editor Andrew Rochon.
What can I but enumerate old themes,
First that sea-rider Oisin led by the nose
Through three enchanted islands, allegorical dreams,
Vain gaiety, vain battle, vain repose,
Themes of the embittered heart, or so it seems.

Ya late season corn feed ducks and geese would be ideal. If the fat is yellowish good. However if they been feeding in soy can also have an off taste.
