    The back and legs make fantastic stock!!! Just keep all your legs and backs from all game birds in a freezer bag in the freezer. Keep chicken backs and wings too if you have them. At the end of the season you make stock. I often have "4 bird stock" - chicken, grouse, woodcock, dove. It's great for gravies and soups!
