I butcher my own but was at Leska's Meat & Delicatessen in Orillia last November during deer season to get them to make some venison Pepperettes for me, saw at least 7 or 8 deers hanging waiting to be process.

The made some delicious Pepperettes & Salami for me think they were one of the drop off place when the MNR still have the hide for hat program.
