Rudy's in Woodstock was absolutely amazing but the Province stepped in to screw them over. Decided they were supposed to be in a different business classification and their taxes went for $4000/yr to $18000 so he had closed. Same deal with one in Bright

Stemmler's Meats in Heibelburg (just west of Waterloo). Ask for Shawn or Terry, they look after the wild game processing. You need a mininum of 25lbs/recipe. We brought 2 20lbs boxes of, venison they topped up to 25lbs with pork and got 25lbs of pepperettes and 25lbs of summer sausage. That gave us 11 4"x12" summer sausages and 25lbs of pepperettes (obviously). Cost was $140 out the door.
They make the most amazing summer sausage (smokey and peppery) I've ever had and very flavourful pepperettes. When you ask for HOT, you get HOT.

There is a guy near Sprucedale that we take our deer to. He used to work for Sprucedale meats but now does wild game from his house because Sprucedale meats doesn't do wild anymore...don't have his number with me (its at camp) but if you call Sprucedale Meats and ask for Terry's number they'll give it to you....he is excellent!

Bill is who we use for our camp. We hunt up around Bancroft and have had others up there do it for the convienience and have been dissappointed. Bill is a good friend and knows how to butcher. His son has basically taken over the business and is just as good. I've never had to marinade anything from them and I swear it is beef it's done so good.
They also do catering and have a great chip wagon! I highly recommend Shrubs!
