    Typically we turn our bunnies into curries - but that does not really do them justice. An old timer down the road from me used to bring me some leftovers when I gave him some rabbits. He would wrap it in bacon and stuff it with apple or pears. So I thought I might try something along that line.

    I browned a quartered rabbit in oil, then added a few tablespoons of butter, reduced the heat and added a chopped up apple and a thinly sliced 1 inch cube of ginger root. I added a little apple cider (not vinegar but juice) and simmered it all for an hour or so, I made sure it never dried out by adding water. I also added a tablespoon of diced lemon thyme that we grow in the garden and keep in the freezer. the apple turned to mush and was a little syrupy, served it on plain white rice.

    Best rabbit I've had in a long time. very sweet and rich and the taste of the rabbit still came through. simple and different but still easy.

    Sounds very similar to a recipe I do with pheasant breasts.
