Wow, choosing favourites.....moose. Grouse. Then deer, then bear....but I will take a good bear HAM over a deer roast any day.
I do love elk too, but haven't eaten a lot of it so far.

For me nothing beats late season corn fed mallards, in general though ducks are my favourite table fare, not all ducks obviously. I also love grouse and a good feed of venison and moose too!!!!

Nothing beats a fresh deer tenderloin and heart victory meal at the camp. We eat it same day as the kill, never brought a tenderloin home its the camp tradition.
