I've eaten a lot of beaver but I find taste to be hit and miss so wouldn't be my favourite. Toss up for me between moose and grouse, 3rd would be rabbit

Deer tenderloin, grouse breast, thin slice of moose quickly fried in butter, rabbit stew, cured goose breast, BBQ aged duck breast.... I just can't decide, love them all...

Hungarian Partridge, Woodcock/Grouse, Rabbit(Cottontail, European Hare, Showshoe) followed by big game like Moose/Deer.

They are all good and in fact the order may change depending on cut and how it is prepared. Had a sirloin tip roast off of a whitetail tonight and it was pretty fine.
I'm curious how you (or any members out there) prepare/cook their woodcock. I've got a couple of local spots that have been full of them the last few Fall's. Thanks
