I've met a few guardian dogs - maremmas and pyrenese mostly and they are absolutely stunning. However "gentle" would not be a word I would use. They are a very intimidating presence (not a negative thing in regards to their job).

"Gentle soul"......when you watch him licking a new born lamb or laying on the floor by the fire with a new puppy, it's amazing to see how gentle a dog that size can be. Great family pet if acclimatized to that environment. Most Pyrenees are however 'yard dogs' so their gentle side isn't often seen.
He can, yes, be intimidating ...but only to those who, in his opinion, have no business in 'his' yard. Which, like you said, is what they were breed for.
