I would say, it depends on how far you want to go? and how hard you want to paddle?
A previous poster said both Spanish River (Great for Pickerel and Pike, however, you are looking at end of May, and blackflies can be horrendous.
He also said Algonquin. This is my preference for a canoe trip, end of April, early May. Right as the blackflies start coming out, but are not unbearable. There are cold nights, and in some years have had to break through ice on some lakes, however the brookie fishing is great. Especially if you take Brent campground, Cedar Lake, and up the nipissing river to get back to Catfish lake, or farther, however, portaging is the killer here (3km portages at a point) This is a great paddle though. very peaceful.
Another Year, we went in through Tim, all the way to Longbow lake. We had to hack our way through 2" of ice on some lakes. but the portage was only 200m max.
Great canoe trips in Ontario are possible. Crown land as well, you just have to research.
