Would imagine any dog could be used as long as you're realistic as to the performance. Still have fond memories as a boy of 13 being stationed on a muskrat mound with our Brittany on the edge of Tiny marsh opening day duck season. Dad and the group would go in and shoot away at the morning flight of ducks. Afterwards a whistle was my single to release the dog at which he search the marsh for downed ducks. Always got more birds than was shot by or group. The bonus was on the walk out there was the opportunity for a pheasant or 2.

I don't personally (I own Griffons) but I have hunted with one. I certainly would not question their ability or enthusiasm to retrieve. Of the versatile breeds the PP is likely the most adapt for full season waterfowling.

Pudelpointer would work great for that task. That's what they were bred for.

Never tried but from what i see, my PP is a natural in the water and as far as retrieving, as long as it fits in his mouth, he will retrieve it - be it stick, tennis ball, grouse, pheasant, dummy duck - you name it.
Would like to try it some day - just never had the chance to take him duck hunting.

In this clip, he was looking for a stick i threw and landed on the other side of the creek. He only got one command to fetch the stick - and his persistence is incredible - trying to get on the other side. I was amazed to watch him run up the and then swim down the stream trying to get on the other side. PP's are amazing in water and the level of energy and enthusiasm - leaves no doubts.
