Looking for GSP Breeders
I'm currently looking to find a GSP puppy. I'd appreciate any advice or recommendations the community might have to help me find the right pup. Please send by PM.
My primary concern is to find breeder who is producing health pups. Hopefully something this fall or next spring.
I'm willing to drive up to 20 hours or so to find the right breeder/puppy. So please let me know if you have any experience with breeders in Ontario but also Quebec, Michigan, Indiana, Ohio, Pennsylvania, New York, Etc.

Just to clarify : Are you wanting to hunt with this dog or are you looking for a family pet?
If only a family pet, I could recommend an excellent breeder in ON , otherwise PM sent .
( Even if just a family pet , any sporting breed will need LOTS of hard running exercise daily or it will drive you c r a z y.
)

Hunting will occur but it is not the the only reason I'm getting the dog. If I had my way we'd be trying to find a German Shepherd but my wife convinced me the German Shorthair would be a great fit for us as well.
I'm quite prepared to spend a lot of time working with this puppy to turn it into the type of companion we're searching for. My only worry if searching out a quality breeder who will get them off to the best start possible with the least chance of future health problems down the road.
I love training with the dogs and have helped several friends work with theirs but hate the idea of getting a dog from a backyard breeder and spend enough time solving their rescue dogs issues to not want to go down that route either.
Our pup will primarily be a family pet and will spend significant time outdoors as my wife and I are avid campers. He'll be in the backcountry a lot. Bikejoring/Skijoring will hopefully happen once the dog has grown and I've trained them enough.

A GSP will LOVE this. 
I've had 2 GSPs.
Have a look at Aspenglow and Whisperfield, in ON.......... reputable, long time GSP breeders.

Most NAVHDA breeders are interested in placing their pups in " Hunting Homes."

This is very true, but by the sound of things this gentlemen will be giving the dog what it needs:

This is also my impression from what the OP stated.
In general, I find that there are many who buy a lot of dog (just in case) and what really happens is that the (hunting) dog gets locked up the entire year in a kennel and then when it comes actually to some hunting, the dog will be so excited that it pretty much becomes unusable. Those dogs are bred to hunt pretty much 365 days (temperature permitting), not 3 weekends per year.
So what's better, a couple of weeks hardcore hunting and 10+ months kennel, or a few weekends hunting but daily and exercise the entire year (an on-leash walk is not exercise)?
