wild cranberry sauce

I was lucky enough to waterfowl hunt a sphagnum bog with a bunch of wild cranberries growing. it took a while but over two trips I managed to get about 2 cups of berries. I hope to get some more soon if they haven't all fallen.
I modified a recipe I found online:
Prep Time: 5 minutes
Cook Time: 20 minutes
- Zest of half orange, cut into large pieces and pith removed
- 2 cups cranberries
- .5 cup maple syrup
- .25 cup of brown sugar
- 1/4 cup water
- 1/4 teaspoon or less of each of allspice, ground ginger, nutmeg, cinnamon
combine all ingredients and bring to a boil. reduce heat and simmer stirring frequently for about 25 minutes until most of the berries have burst and are soft.
remove the orange zest pieces and put in fridge, sauce will thicken when chilled.
serve cold or at room temperature.
I didn't get a picture of the finished sauce, but it looked like canned cranberry sauce, but less gelatinous. it was a hit and I am sure it can be combined with any number of wild game recipes, or just with thanksgiving dinner like I did last night!!
this recipe can be easily modified to suit your tastes, but this is what worked for me. just make sure not to put too much spice in it, since it is a bit overpowering.
