    Default Re-freezing goose

    Hey guys!

    I believe TurkeyRookie once told me he re-freezes goose no problem.

    But just wanted to make sure if i take all my goose breasts out of the freezer and turn them into sausage and then re-freeze them for cooking and eating alter is that ok?

    Not goose specifically, but I've refrozen game meat plenty of times. As long as it's handled safely there's no reason you can't. It's said that you can lose a bit of quality because you lose moisture in the process, but if you're turning it into sausage that won't be a problem.

    The act of thawing and refreezing the meat is harmless. It's the handling during and in between that can be a problem. The main things to be careful about are keeping the meat cool during the process and then getting your finished product back to frozen when it's done. Too much time at room temperature will allow bacterial growth. Don't quick-thaw the breasts. Thaw for a couple of hours at room temperature then continue to thaw overnight in the fridge. That way the meat stays cold. Use clean surfaces and equipment. Keep your hands clean, latex gloves are even better. If possible, make the sausages in a cold environment.

    As long as it was thawed in the fridge, it's safe to re-freeze. It'll lose quality and flavor, but it's safe.

    I always freeze mine until the end of the season than make it all into sausage at the same time.

    Been doing this for years, just did 80lbs coupla weeks ago. As for mentioned keep it cool and you're good to go.

    My butcher once told me if it's thawed out on the counter like near the kitchen window and is exposed to sunlight then do not re-freeze.

    I would just let it defrost in the refrigerator and not on the counter just to be safe and ensure that the meat is always cool. I'll be defrosting and refreezing some meat soon so that I can give a portion of it to someone that I promised. We'll be placing everything back into the freezer once it's portioned off and I'm not too worried about it.
