With so many moose on one island, it’s no wonder Newfoundlanders have developed a great moose burger recipe. This one is named after Kevin Edison who hails from the island but is currently stationed in Thunder Bay serving in the Royal Canadian Air Force. The addition of savory to the recipe is a Newfoundlander twist, as it’s an herb they use a lot.
BBQ time: 12 minutes, patties need to sit in fridge for 1 hour
1⁄2 cup cooked and cooled, finely chopped caramelized onion
1 clove garlic, minced
1⁄3 pound ground bacon or pork
1⁄2 tsp. fresh rosemary or savory
1 lb. ground moose
1 tsp. salt
1 tsp. black pepper
In a large bowl, place all ingredients and mix until just combined. Form into 4 patties, each about ¾ thick. Transfer to plate, cover and refrigerate for 1 hour.
Heat grill to about 350 degrees. Sear burger for 2 minutes on one side, turn and repeat. Flip again for 3 minutes, then turn last time and let cook until desired doneness, about 3 minutes. Let sit 2 minutes before serving.
Serve with cheese and all the toppings.
