For all you sausage makers out there, just noticed Pork Shoulder and Leg on special this week at Fortino's. Time for a road trip
Not just sausages, but pork shoulder/butt is great for making pulled pork. I buy it this time of year put a southwest rub on it, vac pack it, leave it in the fridge or cold cellar for several days, then into the freezer it goes.
Also, smoked hocks are great for pea soup or homemade beans. I have a killer bean recipe.
The loins make great pork chops either smoked or plain.
Pork bellies = bacon

odd they usually have legs & shoulders at 99. Guess people have found out shoulders produce a better product. Going to have to check it out. Hopefully its not the bagged stuff full of water.

Thanks. They're vac packed and in the freezer ready for the BBQ. I also smoked pork chops, but I still have some in the freezer. There's lots you can do. That's most of my pork for the year.Quote:

Im planning on doing sausages next month.
Can i freeze the pork that i purchase make the sausages mixed with venison next month and freeze it again.

I do, but most of my sausages are hot smoked, but I've also done others than weren't with no problem. It's a good way to get rid of old meat in your freezer, just be careful thawing it.Quote:

Just noticed our local Loblaws the parent company of Fortino's has pork shoulder and leg on sale. Price per pound a little more than Fortino's but the difference is a lot less than the cost of gas to travel. If you have a Loblaws store check it out.Quote:

Local Loblaws is cheap this week. $1.49/lb for whole shoulder, picnic roast, whole leg. About as cheap as it comes up our way. Time to make snausage!
Don't bet on it... They have whole legs and whole shoulder picnic roast at the Independent in Haliburton for 1.29/lb... I bought a 10lb shoulder for 13 bucks yesterday and am just roasting it now... In a package of parchment paper in the oven with olive oil, lemon, a little white wine, herbs/spices and garlic and onions and salt/pepper. Smells pretty awesome right now...Quote:
